How to make Egg Biryani

Biryani is a set of rice (basmati)  based food mixed with spices and mixed with meat, fish, eggs, vegetables. The name comes from persian word beryā(n) which means fried or roasted. The cooking method of Biryani came from Iran. Local variants of this dish are popular not only in South Asia but also in Southeast Asia, Arabia, and within various South Asian communities in Western countries. We will make it with minimum ingredients. It is easy to make and tastes yum.
Ingredients: (For Biryani it is better to prepare all the ingredients and keep in hand first otherwise it will become tiresome. So I always tell you to keep all the ingredients ready before cooking it saves time). 
  • Take half cup warm milk and put few strands of saffron in it. This is a must for biryani otherwise you wont get that taste
  • 6 Boiled eggs
  • 2 medium sized boiled potatoes
  • 2-3 cups of Basmati rice (Any brand) This is also a must for biryani
  • 3 medium sized onions 
  • 2 medium sized tomatoes
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 small cardamom
  • 2 cloves
  • 1 large cardamom
  • 1/2 cup coriander leaves
  • 10 -12 mint leaves
  • ginger garlic past
  • 4 green chillies (two you can slit and two you can keep it whole)
  • salt to taste
  • 1 teaspooon turmeric powder
  • 2 teaspoon kashmiri chilli powder
  • 1 teaspoon pepper powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
Boil the eggs and pork it with fork because we are going to shallow fry the eggs.
First take a pan and fry the onions till golden brown and keep it aside. Now the same  pan pour a little oil  and put 1 teaspoon kashmiri chilli powder and 1 teaspoon turmeric powder and fry the eggs and the boiled potatoes one by one.
Fry the eggs just for say a minute till it gets coated and fried.
Same way you fry the potatoes also.  It tastes very yummy in the biryani.
Keep this aside and keep the rice for cooking with 2 tablespoon of ghee 2 bayleaves and 2 cardamoms and add a little salt to it.
When the rice is cooked remove it and put it in a big plate and spread it out. Now you can put saffron soaked with the milk and any food color if you want this is totally optional. You can put only saffron too. Mix it well.

Now for cooking the gravy for the Egg Biryani

  • Take 1 large cinnamon
  • Take few onions from the fried onions kept aside 
  • Put 2 cloves 
  • Ginger garlic paste
  • 2 sliced green chillies. Chilli powder also you can put according to how spicy you want to make
  • Put all the dried spieces like salt, turmeric powder, coriander powder, cumin powder mix it and add tomatoes and 1/2 cup water and let it cook for 5 minutes.
  • Once the tomatoes are soft add the fried potatoes and eggs to it and again fry it for 1-2 minutes and close the gas flame. Your curry is ready.
Now you have to make the layers. First take a heavy pan put little curry on it then put the rice add little fried onions, coriander leaves, mint leaves.
Again put curry with potatoes and eggs and rice and add little fried onions, coriander and mint leaves.
Like that on top it should be layered with rice. Keep it on gas on a very low flame for another five minutes and your yummy biryani is ready to serve. Serve it with vegetable raita.
Lovely mouthwatering biryani and raita is ready to eat.
