Mint Chutney

Mint Chutney Recipe Mint chutney is made up of coriander leaves, mint leaves and other spices. Usually we have it with Indian snacks, sandwiches and chats. It has all the tastes like sweet, sour, tangy in it. My version of mint chutney is very simple since I use very little ingredients in my cooking with less masalas. Ingredients: Ingredients: 1.Green Chillies 2 2.One small onion 3.One small tomato 4. Aamchur powder 1 teaspoon ( Dry Mango powder) 5.Jaggerry 2 small pieces 6. Ginger 1/2 inch 7. Garlic 2 pods 8.Coriander one bunch 9. 10 mint leaves 10. Salt as per your taste. These are the ingredients for the Mint Chutney. You have to put it in a mixer jar and grind it all without water since there is already one tomato in it which has lots of water. After the grinding you will see the chutney like this. Chicken Tikka

Recipe for Chicken Tikka Chicken tikka is very popular in India.   People enjoy the chicken tikka as starters in different ways. Tikka means small pieces of chicken. I am sharing with you all how to make Chicken Tikka Recipe in a very simple way. My recipe is very easy marinated in yogurt and ginger garlic paste and other spices. And  I make it in a pan or kadai with shallow frying it. You can also make Chicken Tikka Masala in a gravy dish or Chicken Tikka Biryani too. I cook my dishes with minimum of masala. The total preparation time after you have all your ingredients ready in hand is just  5 minutes. Aloo Paratha

Aloo Paratha  The all time favourite  Aloo Paratha recipe in a simple way. This Aloo Paratha  recipe I learned from my mother which is very simple to make and tastes yummy. Ingredients of the Aloo Paratha Recipe 3-4 boilded potatoes 1 medium sized onion finely chopped 2-3 green chillies finely chopped coriander finely chopped 2 teaspoon red chillie powder 1 teaspoon salt as per your taste  1 teaspoon aamchur powder (dry mango powder) Wheat dough Method Mix all the ingredients. This will be stuffing for your Aloo Parathas . Take a lilltle dough and roll it like a chappati and fill the mixture in it and fold it again and then make parathas. Frying Aloo Parathas on a tawa / flat pan Now take little dough stuff  the Aloo mixture and make parathas and put it on a flat frying pan or tawa to cook. Put little oil and cook on both sides. Coconut semolina (rawa) burfi in 3 easy steps Ingredients : Semolina (rawa) 2 cups Desigated coconut 2 cups ( It is available in the market which is very handy) Nestle milk powder or any other milk powder 2 cups Milk 2 cups 2 tablespoon ghee Dry fruits (Almonds, pista, kaju, kismiss) You can take of your choice or whatever is available at home. Method: Step 1 : Take a pan put 2 tablespoon ghee and put semolina (rawa) and stir it for 3-4 minutes. Now put Nestle milk powder, desigated coconut and give it a stir. You can put additional sugar if you want to make it sweet. I do not make it very sweet. Add 2 cups milk to it  and mix it well but pour the milk little by little to form a consistency of a dough. It will take another 2 minutes. Step 2: Set it in a plate/ tray  When you pour the mixture in a plate or tray to set add the crushed dry fruits on it and press it with spatula or flat spoon. Let is set for 1 hour or you can keep it in a fridge
Dahi Vada Take udit daal one cup and soak it in water for 1 - 2 hours and grind it into a paste like consistency. Take half inch ginger, 2 green chillies and cut it very fine and mix it with the udit daal batter. Put oil in kadai / deep pan and deep fry the small vadas. Now take water in other vessel and dip these fried vadas in it and remove it by pressing it with your hands. Take 500 ml of curd run it in a mixture once with little sugar. Put the vadas in the serving bowl pour the curd over it and sprinkle little red chillie powder and pepper powder and have the yummy dahi vadas. Add a bite of spice in your khattee meethi life
Recipe for Chicken Stew for dinner Ingredients : 500 gms chicken 2 medium sized onions 2 green chillies, 1 red chillie (whole) 2 medium sized tomatoes 2 medium sized potatoes ( cut it in diced shape) 200 ml coconut milk Marination of chicken Marinate the chicken with salt and pepper for 30 minutes. Method : In a pan or kadai put 3 tablespoon oil put onions and then saute it till translucent. Then add green and red chillies fry for 1 minute. Now put 2 teaspoon ginger garlic paste and fry for 2 minutes. Now add chicken pieces which was marinated with salt and pepper and fry for 5 minutes on low flame. Add the diced potatoes and tomatoes add salt and cover and cook for 3 minutes. Put coconut milk bring it to boil and then simmer for 20 minutes. Add 1/4 teaspoon pepper and coriander leaves and your delicious chicken stew is ready. Serve it with appam it will taste yummy. Add a bite of spice in your khattee meethi life.
Noodles in Desi Style in 5 minutes Ingredients: Capsicum, onions, peas, tomatoes.Cut all these and keep aside Cut the packets of the  NOODLES  MASALA   which you get with noodles and keep aside. Boil the water in a saucepan and add noodles and cook for a minute and then remove the water and strain it. Take a kadai / pan put little oil and add the ingredients which you have cut into it and the NOODLES MASALA and little water and stir fry for 2-3 minutes. Add your noodles now and give it a nice mix and fry it for a minute and your tasty noodles are ready to eat.  You can put any sauces like soya sauce, tomato ketchup, chillie sauce to enjoy it. Now you can opt it with chicken kababs, chicken salami, chicken sausages. Add a bite of spice in your khattee meethi life.

Butter Chicken

Recipe for Butter Chicken for Dinner Marination : Take 500 gms of chicken breast boneless pieces, add 2 tablespoon curd 2 tablespoon ginger garlic paste, 1 tablespoon kashmiri chillie powder, 1 teaspoon pepper powder and marinate and keep aside for 30 minutes. Then in a pan put a little oil and shallow fry and cook the chicken and keep it aside. Butter chicken gravy paste Add 1 medium sized onion, 1 teaspoon ginger garlic paste, around 15 cashewnuts, 2 big tomatoes, salt as per your taste and mix it well and cook till tomatoes become soft. After it cools grind in a mixer and make a paste. Take a Kadai / pan add 1 tablespoon butter and little oil or you can take only butter also. Add 1 teaspoon red chilli powder add the  Butter chicken gravy paste, 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder and add little water and mix well and cook for another 2 minutes. Now add fried chicken pieces and mix well. Add one tablespoon tomato sauce, 1 teaspoon kasu
Chicken Sausages Recipe with Rice Ingredients: 1 packet sausages whichever you want to take 2 medium sized potatoes Green peas 1/2 cup 2 medium sized onions Coriander 1/2 cup 3 to 4 garlic pods 3-4 green chillies Method : Cook the rice with one teaspoon oil, cumin seeds / jeera in the cooker and keep aside. Take a pan or kadai and shallow fry the sausages and keep aside. Likewise shallow fry the potatoes  which you have to cut in cubes till brown. Lastly shallow fry the peas for a minute. Drain the water of peas and keep aside beforehand otherwise it will splutter. Remove and keep aside. Now fry the onions till golden brown add chillies, garlic, add salt and red chillie powder, stir well and now add all the fried items kept aside and rice also. Mix it well and cook for 2 minutes, garnish with coriander and serve the tasty fried rice. You can do this with paneer too. Add a bite of spice in your khattee meethi life.

Kadai Paneer

Kadai Paneer Restaurant Style at home within few minutes  Method : Take 100 gms paneer add salt and red chillie powder and keep aside for 10 minutes. Then take a pan put little oil and fry the paneer till golden brown in color and keep it aside. In the same pan put 1 small capsicum and 1 small onion preferably cut in bulb shape and fry till translucent for one minute and  keep aside. Cut in bulb shape How to make Paste / Gravy for kadai paneer Now add oil in a pan /kadai put 1 teaspoon jeera or cumin seeds, 4 peppercorns / kaali mirch,              2 cloves / lyang, 2 cardamoms/ elaichi then add onion and 2 teaspoons of ginger garlic paste and        1 tomato and cook and till tomatoes becomes very soft. Then grind these into a fine paste and strain it. Now take a pan or kadai put little oil may be 2 tablespoon add 1 cinnamon / dalchini add 1 bay leaf / tej patta add the  Paste / Gravy for kadai paneer then add coriander powder/ dhania powder 1/4th teaspoon turme

Egg and Vegetable Roll

Egg and Vegetable Roll In 3 easy steps. Step : 1 Ingredients : Onions, capcicum, green chillies, coriander, 2 eggs beaten with salt and red chilli powder. Wheat dough which we usually make at home for chapatis/rotis. Method : Cut all the indredients as seen above and fry it in a pan with 1 tablespoon oil for a minute and keep aside. Step : 2 Make phulkas as usual without any ghee or oil. Then put little oil in a pan and put little beaten eggs mixture on it and immediately put your cooked phulka on it and turn it both sides till the eggs are cooked which will take another minute. Step : 3 Apply cheese spread and put the fried vegetables kept aside in a pan, put sauce and roll it and have the tasty Frankies. You can add in different Fillings:  You can opt for filling paneer, boiled chicken, chiken tikka, left over vegetables and enjoy. Add a bite of spice in your khattee meethi life.
